A Warm Welcome to Collin Donnelly and Amanda Bertschi

We are delighted to introduce Red Hen's new Executive Chef, Collin Donnelly.


Collin is a graduate of the New England Culinary Institute in Montpelier, Vermont, and comes to us from Blackberry Farm, a Relais & Chateaux resort in Walland, Tennessee. Collin is passionate about food and brings a decade of distinguished experience cooking in a variety of fine restaurants from Bellingham, Washington to Auburn, Alabama.

We also welcome Amanda Bertschi to our team. Like her husband Collin, Amanda is a graduate of New England Culinary Institute, an accomplished pastry chef, and is studying for her sommelier's certification. During Parents Weekend November 4 - 6, you'll find her in the kitchen with Collin, but we plan to put her many talents to use in the dining room and wine cellar as soon as possible.

We're thrilled to have them both.

    I am so happy and proud of you both.CONGRATULATIONS!!! We miss you both terribly down here in Auburn Alabama, but i know that I will always have my "Chef Donnelly" Hot-line if ever needed. I cant wait to bring Cruz and Carrie to see you both!!!!!
