We are delighted to introduce Red Hen's new Executive Chef, Collin Donnelly.
Collin is a graduate of the New England Culinary Institute in Montpelier, Vermont, and comes to us from Blackberry Farm, a Relais & Chateaux resort in Walland, Tennessee. Collin is passionate about food and brings a decade of distinguished experience cooking in a variety of fine restaurants from Bellingham, Washington to Auburn, Alabama.
We also welcome Amanda Bertschi to our team. Like her husband Collin, Amanda is a graduate of New England Culinary Institute, an accomplished pastry chef, and is studying for her sommelier's certification. During Parents Weekend November 4 - 6, you'll find her in the kitchen with Collin, but we plan to put her many talents to use in the dining room and wine cellar as soon as possible.
Red Hen is a restaurant located in historic downtown Lexington, Virginia serving dinner Tuesday through Saturday. Chef Collin Donnelly creates a new menu daily in order to use the best and freshest ingredients available locally and seasonally.
